Nicola Maisto and Rami Ezzi teach every course themselves — no stand-ins, no interchangeable workshop trainers. Whoever learns with us learns from them.

Nicola Maisto runs Maisto Caffè in Oranienburg in the fourth generation and at the same time keeps the family roastery in Naples going, established in the 1950s. He knows every step from the green bean sack to the cup — roasting, blending, calibrating, selling.
His focus in the school: espresso profiles, sensory training, machine setup, and everything to do with opening a café. Anyone planning to open a café benefits in particular.
Rami Ezzi has been working in Berlin as a café barista for over ten years, most recently at Modo Berlin in Mitte. His focus is Latte Art (a regular Latte Art Throwdown participant) and bar choreography under pressure — how to push six orders through cleanly at the same time.
In the school he teaches every Latte Art course, the bar-practice days of the Professional Training, and the corporate workshops in central Berlin.
