The week-long training for professionals, ambitious career-changers, and prospective café owners. Four participants maximum — we have the time.

Day 1 — Maisto Caffè

Sensory & roasting

Cup tasting, the aroma wheel, three single origins blind. How a profile actually comes together — short visit to the roastery workshop.

Day 2 — Maisto Caffè

Building espresso profiles

Grind matrix, pressure profiles, EBF/EY measurement with a refractometer. You build three espresso profiles of your own.

Day 3 — Modo Berlin

Milk deep-dive & Latte Art

Microfoam science, pour geometry. Competition level: four-layer rosettas, wing tulips, free etching. Video coaching.

Day 4 — Modo Berlin

Bar choreography

How to handle six orders at once. Movement efficiency, cup logistics, till workflow. Live during café service.

Day 5 — Maisto Caffè

Exam & café practice

Written theory exam (90 min), practical exam (3 espressos + 3 cappuccinos in 12 min), café-opening workshop, certificate ceremony.

FAQ

Is this an official SCA certification?

No — the content is aligned with SCA modules (Foundation, Barista Skills), but we are not an accredited SCA training centre. For official SCA certificates we can put you in touch with the right people.

Who does this training?

Café staff who want to move up. Career-changers who want to enter the field seriously. Prospective café owners who don't want to spend two years learning.

What do I need to know beforehand?

Ideally café practice already, or at least the Barista Foundation plus two months of your own practice. We check in advance whether the training is the right fit.

How does the exam work?

90 min theory in writing (40 multiple-choice questions + 5 open). Practical: three espressos and three cappuccinos in 12 min, scored on speed, consistency and Latte Art.

What does 'café-opening workshop' mean?

Four hours on equipment budget, machine choice, costing, staffing, suppliers. With the concrete experience of Nicola (own roastery) and Rami (Modo Berlin).

Is lunch included?

Days 1, 2, 5 in Oranienburg: lunch at Maisto Caffè included (Italian, small, good). Days 3, 4 in Berlin: you organise it yourself — four cafés within walking distance.

How do I get between the locations?

Self-organised: S1 to Oranienburg (45 min from Berlin Hauptbahnhof). We recommend the AB+C day ticket.

What costs extra?

Material and coffee fully included. Lunch on days 3/4 not. Travel between Berlin and Oranienburg not.

Can I pay in instalments?

Yes — 50 % at booking, 50 % at the start of the course. Longer instalment plans on request.

How often per year does the training run?

Four times per year (February, May, September, November), each Mon–Fri. Dates on the contact page or by email.

What if I don't pass the test?

A retake within 30 days at no charge. If that also doesn't work out: honest feedback and a practice-roadmap recommendation.
